A simple and healthy dish that will fit any occasion, either for dinner or lunch, your guests will be thrilled with the flavors of Don Marco's Cilantro-Lime Tilapia!
Makes: 4 servings
5 Miramar Seafood Tilapia Fillets
1/3 cup all-purpose flour
1 tsp. salt
½ tsp. pepper
½ tsp. ground cumin (divided)
1 tbsp. olive oil
½ cup chicken broth
2 tsp. minced cilantro
1 tsp. grated lime peel
2 tsp. lime juice
In a bowl, mix flour, salt, pepper and 1/4 tsp. of cumin. Dip fillets in flour mixture to coat both sides; shake off excess.
In a large skillet, warm oil over medium heat. Add fillets, cook uncovered for 4 mins on each side or until fish flakes easily with a fork. Remove fillets onto plate.
To the same skillet, add broth, cilantro, lime peel, lime juice and remaining cumin; bring to a boil. Reduce heat; simmer uncovered for 2-3 minutes or until slightly thickened. Pour over tilapia and enjoy.
