Don Marco's Pescado Frito Recipe

Pescado Frito, which translates to Fried Fish, is a very popular dish in Mexico! There are many ways of preparing Tilapia, but frying is a simple yet delicious way to prepare it. The following recipe will create a delicious dish of Tilapia that pairs well with a simple salad or rice.

  1. Rinse the fish in cold water and pat dry with paper towels. Using a sharp knife, make 3-4 cuts on each side of the fish.

  2. Season the fish inside and out with salt and pepper. Rub the fish with the scallions and lime juice. Allow fish to sit 10 minutes before cooking.

  3. Drench fish with flour to coat. Pour oil into a large frying pan, the oil should be at least 1 inch deep.

  4. Heat the oil over medium-high heat to 375 ˚F. Place the fish in the oil carefully, standing back in case the oil splatters, and then turn the heat to medium.

  5. Fry the fish for about 5-7 minutes (without turning it or skin will break). Turn the fish and fry about 5-7 minutes more or until the skin is crispy. Serve and enjoy.
